In our culinary crusade, cleanliness is our shield and soap is our sword. Before handling any food, wash your hands thoroughly with warm water and soap for at least 20 seconds. This simple yet powerful act keeps germs and bacteria at bay, protecting both you and your delicious creations.

The Chill Zone: Keep Cold Foods Cold

Venture into the frosty depths of your refrigerator and ensure your perishable foods are stored at the proper temperature (below 40°F / 4°C). To maintain this icy fortress, place a thermometer inside your fridge and check it regularly. The cold slows down bacteria growth, guarding your food from spoilage and ensuring it’s safe to consume.

THE TAMING OF THE FLAME: COOK TO THE RIGHT TEMPERATURE

When cooking, use a food thermometer to guarantee that your meats, poultry, and fish are cooked to their safe minimum internal temperatures. Here’s a quick cheat sheet:

  • Poultry: 165°F (74°C)
  • Ground meats: 160°F (71°C)
  • Beef, pork, lamb, and veal (steaks, roasts, and chops): 145°F (63°C) and rest for 3 minutes
  • Fish: 145°F (63°C)

This ensures your food is bacteria-free and deliciously prepared, ready to be devoured.

The 2-Hour Rule: Eat or Refrigerate

Time is of the essence when it comes to perishable foods. Once cooked, these foods should not be left at room temperature for more than two hours. If the temperature is above 90°F (32°C), this window shrinks to just one hour! Either eat your delectable dishes within this time frame or store them in the refrigerator to keep them fresh and bacteria-free.
