Spicy Chili Garlic Noodles

  • 8 oz. rice noodles
  • 1 tbsp. vegetable oil
  • 4 small shallots thinly sliced
  • Kosher salt
  • 1 1/2 tbsp. sesame oil
  • 1/2 c. thinly sliced green onions plus more for serving
  • 4 cloves garlic minced
  • 1/3 c. low-sodium soy sauce
  • 2 tbsp. chili garlic sauce
  • 1 tbsp. packed brown sugar
  • 1/2 tbsp. lime juice
  • Pinch red pepper flakes optional


  • First, cook your noodles to perfection and set them aside. In a large skillet, heat up some oil and add in the shallots, seasoned with a touch of salt. Wait for the magic to happen as they turn golden brown and super crispy. Remove them from the skillet and set them aside on a paper towel-lined plate.
  • Now, it’s time to add some sesame oil to the skillet and watch it sizzle. Throw in some green onions and garlic and let the aroma fill the room. Next, add in the soy sauce, chili garlic sauce, lime juice, brown sugar, and a hint of red pepper flakes for that extra kick. Let everything simmer and reduce down to perfection.
  • Add the cooked noodles to the skillet and toss until every inch of the noodles is coated with the sauce. Now, it’s time to plate up and garnish with the crispy shallots and more green onions for that fresh touch.
