Sizzling Sunrise Shakshuka

Ingredients

  • 2 tbsp avocado or olive oil
  • 1 small sweet onion thinly sliced
  • 2 cloves garlic minced
  • 1 tsp red pepper flakes more or less to taste
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • pinch cinnamon
  • 1 28- oz can whole peeled tomatoes pureed in a blender
  • 2 tbsp chopped parsley divided
  • 2 cups cooked cannellini beans or 1 can drained and rinsed
  • 6 whole eggs cracked into individual small bowls
  • sea or kosher salt to taste
  • cracked black pepper to taste
  • 1/4 c shredded parmesan cheese

Instructions

  • Heat up your 12” skillet over medium heat, then add the oil and let it shimmer like liquid gold. Toss in the onion and sauté, stirring frequently, until it’s translucent and tender – about 5-6 minutes. Add the garlic, and keep stirring for another minute, releasing its enticing aroma.
  • Time for a flavor explosion! Add the red pepper flakes, oregano, cinnamon, and paprika to the onions and garlic, stirring to coat them in the spices. Sauté for about 1 minute until the spices are toasted and fragrant.
  • Lower the heat and pour in the pureed tomatoes, 2 tablespoons of chopped parsley, ½ teaspoon salt, and ½ teaspoon pepper. Stir it all together and let it simmer for 10 minutes, allowing the flavors to meld. Taste the sauce and adjust the seasoning if needed.
  • Add the white beans to the skillet and let them mingle with the sauce for another 5 minutes.
  • Now for the pièce de résistance – the eggs! Using the back of a wooden spoon, make a well in the tomato sauce and gently crack an egg into it, adding the whites first. Spoon some sauce over the whites to partially bury them, then repeat with the remaining eggs. Season each egg with salt and pepper.
  • Increase the heat to medium and let the eggs simmer until the whites are set but the yolks are still runny – about 7-8 minutes.
  • Remove the skillet from the heat and sprinkle the dish with the remaining tablespoon of parsley. For the final touch, garnish with shredded Parmesan cheese.
