To Soak The Beans

  • cups dried black beans
  • 5 cups water or enough to ensure the beans are submerged

  • 4 cups cooked beans there might be a little extra, that’s perfectly fine
  • 3 Tbs. olive oil
  • 1 cup red onion finely chopped
  • 5 cloves garlic minced
  • 3 tsp. ground coriander
  • 2 tsp. smoked paprika
  • 2 tsp. sea salt
  • ½ tsp. chili flakes adjust to desired heat
  • ½ tsp. freshly ground black pepper
  • Broth optional, if you wish to adjust the consistency
