  • 1 large onion finely chopped
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground white pepper
  • 4 cups panko breadcrumbs
  • 2 lb ground chicken
  • 1 tsp sea salt
  • 1/4 cup whole wheat flour
  • 3 tbsp salted butter
  • 12 oz Maine craft ale preferably amber ale
  • 2 tbsp apple cider vinegar


  • Begin your culinary journey in the Maine woods by melting 2 tbsp of salted butter in a broad skillet over a medium flame.
