Perfecting the Art of Rustic Culinary Bliss

Our Maine Cabin Beef & Onion Pie is a hearty and comforting dish, perfect for a cozy dinner or a family gathering. Featuring tender beef and savory onions enveloped in a flaky crust, this pie is a testament to rustic, home-cooked goodness. Here are some tips to ensure your beef and onion pie is as delicious as it can be:

Meat Preparation

  • The choice of meat is crucial for the pie’s flavor and texture. Chuck steak is recommended for its rich flavor and tenderness when slow-cooked. This cut breaks down beautifully, resulting in melt-in-your-mouth beef that’s perfect for a pie filling.

Browning the Beef

  • Take your time when browning the beef. This step is essential for developing depth and complexity in the pie’s flavor. Proper browning caramelizes the meat’s surface, imparting a rich, savory taste that will infuse the entire pie.

Ale Selection

  • The type of ale you choose can significantly influence the gravy’s flavor. Opt for a dark ale to achieve a richer, more robust gravy. Maine’s local breweries offer a variety of excellent choices that can add a unique regional touch to your dish.

Advance Preparation

  • If time allows, prepare the beef and onion filling a day in advance. Allowing the filling to rest overnight in the refrigerator can enhance the flavors, as the ingredients meld and mature, resulting in a more flavorful pie.

Pastry Handling

  • The key to a flaky, golden crust is keeping the pastry cold until it’s ready to be used. Cold pastry is easier to handle and produces a better texture when baked. Handle the pastry as little as possible to keep it from warming up and becoming difficult to work with.

By following these tips, your Maine Cabin Beef & Onion Pie will be a crowd-pleaser, offering warm, savory flavors encased in a buttery, flaky crust. It’s a wonderful dish that embodies the comfort and satisfaction of home cooking. Enjoy the process of creating this hearty, flavorful pie!

Maine Cabin Beef & Onion Pie

  • 1 kg chuck steak fat trimmed and cut into 3 cm pieces
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 60 ml olive oil divided
  • 2 garlic cloves crushed
  • 2 large brown onions chopped
  • 60 g tomato paste
  • 60 g barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 750 ml vegetable or beef stock divided
  • 250 ml dark ale
  • 1 beef stock cube crushed
  • 55 g unsalted butter
  • 95 g mushrooms sliced
  • 40 g all-purpose flour plus extra for dusting
  • 2 sheets frozen shortcrust pastry partly thawed
  • 2 sheets frozen puff pastry partially thawed
  • 1 egg lightly beaten
  • 1 tablespoon milk
  • 2 tablespoons black sesame seeds optional

  • Let the beef sit at room temperature for 30 minutes, acclimating it for even cooking. Preheat your oven to 180°C (350°F) with a fan-forced setting, ready to slow-cook the beef to perfection.
  • In a large bowl, lovingly toss the beef with salt and pepper, ensuring each piece is evenly seasoned.
  • In a large ovenproof pot, heat half of the olive oil over medium-high heat. Brown the beef in batches for about 3 minutes each, turning them until they’re beautifully caramelized. Set aside the browned beef. Wipe the pot clean for the next steps.
  • Reduce the heat to medium and add the remaining olive oil. Sauté the onions and garlic until the onions turn a lovely golden brown, releasing their sweet aroma.
  • Stir in the tomato paste, barbecue sauce, Worcestershire sauce, 625 ml of the stock, dark ale, and the browned beef. Add the crushed beef stock cube, mixing well to combine all the flavors.
  • Bring this mixture to a gentle boil, then cover it and transfer to the preheated oven. Let it bake for 1 1/2 hours, or until the beef is tender and infused with the rich flavors of the sauce.
  • Meanwhile, in a medium skillet, melt the butter over medium heat. Sauté the mushrooms for about 2 minutes, just until they start to soften. Sprinkle in the flour and stir, forming a roux.
  • Gradually pour in the remaining stock, stirring constantly to avoid lumps. This will create a thick sauce that will beautifully complement the beef.
  • Combine the beef mixture and the mushroom sauce over medium heat, cooking for an additional 10 minutes until the mixture thickens. This step ensures every piece of beef is coated in a velvety, flavorful sauce.
  • Allow the beef mixture to cool to room temperature. For the best flavor, prepare the filling a day in advance, letting the flavors deepen and meld overnight.
  • When ready to assemble the pie, preheat the oven again to 180°C (350°F). Roll out the shortcrust pastry and line a 9-inch pie dish, forming a sturdy base for your pie.
  • Spoon the beef mixture into the pastry-lined dish. Then, roll out the puff pastry and gently place it over the filling. Crimp and seal the edges, trimming any excess pastry. Cut an X in the center of the pastry to allow steam to escape. Brush the top with the egg-milk mixture for a beautiful golden finish, and sprinkle with black sesame seeds if desired.
  • Bake the pie for 1 hour, or until the pastry is golden brown and the filling is hot and bubbling.
  • Let the pie rest for about 10 minutes before serving. This allows the filling to set slightly, making it easier to slice.
