Ingredients

  • 2 1/2 cups 450 g cooked Japanese short grain rice
  • 10 cloves garlic minced
  • 4 stalks green onions diced
  • 3 eggs lightly beaten
  • ½ tsp salt
  • ½ tsp black pepper
  • Vegetable cooking oil
  • 2 tbsp soy sauce preferably Kikkoman or other Japanese brand
  • 2 tbsp sugar
  • 2 tbsp mirin Japanese rice wine
  • 1 tbsp oyster sauce
  • 1 tbsp toasted sesame oil
  • 2 tsp fish sauce

Instructions

  • Begin by heating a large wok or pan, and toss in 2 tablespoons of vegetable oil along with some minced garlic. Sizzle that garlic at medium-low heat until it turns golden brown, but don’t take your eyes off it; these little golden gems can brown in a flash!
  • Once the garlic is ready, separate it from the oil and set it aside. Next, mix all the ingredients for that irresistible sauce and keep it handy.
  • Now it’s time to get back to that sizzling wok! Add another 2 tablespoons of oil and pour in the beaten eggs, swirling them around to create a beautiful eggy blanket. Let it sit for a minute before using your trusty spatula to cut the egg into delightful little morsels. Scoot those scrambled eggs to one side of the wok.
  • Crank up the heat and drizzle in 1 tablespoon of oil. It’s time to bring in the star of the show: the cooked rice! Stir-fry those grains until they’re nice and loose, all while keeping the wok at high heat.
  • Season with salt, a few dashes of black pepper, and half of that heavenly fried garlic. Keep mixing for another minute to let those flavors mingle.
  • Finally, drench your rice with the glorious sauce, making sure every grain is coated to perfection. Top it all off with the remaining garlic and a sprinkle of spring onions for that perfect finishing touch.
