Rustic Lentil & Wild Rice Medley

Ingredients

  • 1 cup green lentils sorted and rinsed
  • 5 cups water divided
  • 1/4 cup grapeseed oil plus more for drizzling
  • 2 large white onions diced (about 4 cups)
  • 1 teaspoon sea salt plus extra to taste
  • 1 cup wild rice soaked in water for 15 minutes and drained
  • Freshly ground black pepper
  • 1/2 teaspoon ground coriander
  • Fresh thyme for garnish
  • Grapeseed oil
  • 1 large white onion thinly sliced into rings

Instructions

  • In a saucepan, simmer the lentils with 2 cups of water until slightly tender. Once done, drain and keep them aside.
  • Heat the grapeseed oil in a large skillet over medium-high heat. Toss in the diced onions and let them cook till they achieve a deep golden hue, taking on a flavor-rich caramelization, which takes about 40 minutes. Sprinkle them with sea salt as they cook.
  • Slowly introduce the remaining 3 cups of water to the pan. Upon boiling, minimize the heat to low and let it simmer briefly.
  • Add the soaked wild rice and the partially cooked lentils. Season with sea salt, freshly ground black pepper, and ground coriander.
  • Cover the skillet, letting the medley simmer on low heat. Once the liquid is absorbed and the rice and lentils are well-cooked, which would take around 18 to 22 minutes, turn off the heat.
  • Parallelly, in another skillet, heat a little grapeseed oil over medium-high heat. Fry the onion slices till they turn crispy with a golden-brown shade.
  • Allow the lentil-rice mixture to sit undisturbed for about 10 minutes, then garnish with fresh thyme sprigs and top with the golden onion rings.
